Lose the Freshman 15: A cooking adventure

Two words describe how I feel right now: I’m full. 

But thankfully I’m not full from too much chocolate. I’m full from garlicky shrimp scampi and broccoli and cauliflower. Sounds delicious right? 

Tonight I was feeling creative for dinner. With the help of a friend and only one phone call home to Mom, dinner was a nutritious success. 

The adventure started with yet another trip to Publix. My friend and I shopped for fresh vegetables, shrimp, garlic, chicken broth and other necessary ingredients to complete our meal. 

If you can read, you can cook. And that is exactly what my friend and I did. We topped whole-wheat angel hair pasta with a Weight Watchers garlicky shrimp scampi recipe. Then we steamed broccoli and cauliflower, which we seasoned with garlic salt and Parmesan cheese. 

Cooking with friends is much more fun than cooking alone. More hands in the kitchen means less time cooking, and you get to enjoy a delicious meal with your friend. 

A healthy dinner with a friend was a perfect end to a busy day. I was able to wind down and feel good about what I was eating. 

I didn’t want my workout today to go to waste, and I was motivated to eat healthy. However, I still had a sweet tooth after dinner. So I hopped in the car with my friend and made my way to my favorite guilt-free ice cream shop in Gainesville, D’Lites. My mouth watered as I anticipated my fewer than 100-calorie dessert. The best part about it is that D’Lites doesn’t taste fewer than 100 calories.

I am a junior journalism student at the University of Florida. I am very passionate about health and fitness and hope to be a health writer or editor one day. Currently, I intern for Giggle, which is a family and parenting magazine that serves the Gainesville community. Outside of journalism I enjoy running, playing and coaching soccer, and socializing with my friends.
