Gainesville Great Eats: Adam’s Rib Co.

Looking for some delicious comfort food that will warm you up on chilly nights? While barbecue may remind you of summer picnics and sweltering gamedays, we promise it’s great any time of year. Adam’s Rib Company offers all your favorites – everything from tender ribs to juicy brisket – and is located just north of University Avenue.
 
Gainesville is chock-full of barbecue joints, from decades-old diners to roadside trailers, and Adam’s is a great pick for an introduction into regional staples like pulled pork, smoked brisket and chopped chicken.
 
Amid the fried okra and fried chicken is the house specialty – the ribs. Large slabs are served up beside spicy macaroni and cheese and baked beans with hunks of pork mixed in. Tender and infused with smoky flavor, the ribs bring in the regulars for their ritual protein-fix. The ribs pack so much flavor you don’t even have to reach for the sauce, but it’s hard to resist topping them off with an extra kick after seeing the more than 20 different sauce flavors sitting on the dining counter.

 
For a different take on Southern fried chicken, try the “Fire Cracker” Fried Chicken Sandwich – a hand-breaded chicken breast dipped in Adam’s “Fire Cracker” sauce and served on a bun.
 
There’s also plenty of “Gator Bait,” downhome appetizers and sides like jalapeno cheddar poppers, corn nuggets and breaded pickle chips served with creamy ranch dressing.
