Quick, Easy, Healthy Recipes for the College Student!

If you’re living off-campus, you’ve probably been forced to face that one thing we’ve blissfully avoided for 18+ years: cooking. It seemed so easy when our parents did it, but now that we’re the ones in charge of our diets, it’s become nothing short of a challenge. We have to walk to the grocery store and choose ripe produce and cook something edible and clean the crud off the stove? What?

Thankfully, I’ve found a few easy recipes that we busy and inexperienced student chefs can tackle. Each recipe has less than 5 ingredients and steps, and takes less than 30 minutes to prepare. Even more, they’re healthy! No grease or butter here. Instead, we’ve taken advantage of the taste of fresh produce and added some yummy seasoning.

Take a few minutes out of your day to prepare these healthy, wholesome meals, and prepare for love at first bite.

Baked avocado and egg

Ingredients

·         2 avocados

·         4 eggs

·         Dash of salt and pepper

Directions

·         Preheat the oven to 425 degrees.

·         Slice and pit avocados, then crack an egg into each avocado half.

·         Add some salt and pepper.

·         Bake in oven for about 20 minutes.

 

Baked squash

Ingredients

·         2 squash of any variant

·         Salt and pepper

Directions

·         Preheat oven to 425 degrees.

·         Cut the squash: first cut off the ends, then slice as wanted (we recommend lengthwise slices).

·         Add some salt and pepper.

·         Bake in oven for about 15 minutes, until bottoms of squash begin to brown. Then flip over and bake until other side is browned—about 15 minutes more.

 

Baked salmon

Ingredients

·         2 salmon fillets

·         1/4 cup soy sauce

·         1 teaspoon lemon juice

·         Salt and pepper

·         Optional: a bit of ginger and cinnamon

Directions

·         Preheat oven to 325 degrees.

·         Mix together soy sauce, lemon juice, and spices, and then pour mixture over the salmon.

·         Bake in oven for about 25 minutes or until salmon is flaky.
