Mid-term Munchies

It is getting to be the time of year for mid-term exams and late night study sessions. You may feel too busy to eat anything, but you must! Here are a few easy snacks you can whip up with things from the dining hall and grocery store in your room or apartment.

Homemade Cosmic Brownies

2 large eggs

1/3 C Milk

1/3 C Melted Butter

1 Instant Vanilla Jello Package

1 Duncan Hines Double Fudge Decadent brownie mix

1 Hershey’s chocolate fudge icing

 

Preheat the oven to 350*F (glass/metal pan) or 325*F (non-stick pan)

Use butter or PAM to grease the bottom and sides of the pan

Combine the brownie mix, eggs, milk, butter and jello mix into a large bowl.

Stir until well blended.

Spread evenly into the pan.

Bake for 27-28 minutes. Add 3-5 minutes for the dark or non-stick pans.

Cool before icing.

Microwave icing for 45 seconds (for easier application.)

Spread across the brownies.

A Very Berry Blood Orange Margarita

(Disclaimer: For those that are 21 years of age.)

¼ C Kosher Salt

¼ C Sugar

10-12 Raspberries (frozen or fresh)

6 Strawberries (fresh)

2-3 oz. Agave Nectar

2 oz. Orange Liqueur

2 oz. Fresh Lime Juice

3 oz. Blood Orange Juice (2-3 oranges)

3 oz. Tequila

Salt for rim with Lime/Orange wedges for garnish

 

Combine equal parts of salt and sugar and spread a saucer.

Rub each glass’ rim with a lime wedge and then dip into the sugar and salt combination.

Place raspberries and strawberries in a cocktail shaker with 1 T of agave nectar and smash the berries and mix well.

Add remaining agave nectar, orange liqueur, lime juice, blood orange juice and tequila into the cocktail shaker.

Fill with ice and shake for 30 seconds until ice is cold.

Strain with mesh strainer to prevent seeds and solids.

Fill the rimmed glasses with ice and add mixture.

Garnish with an orange slice, lime wedge and strawberry.

Breakfast Coffee Protein Shake

2 Handfuls of Ice

1 Scoop of Vanilla or Chocolate Protein Powder

½ Smashed Banana

1 C Brewed Coffee

1 C Unsweetened Almond Milk

 

Blend or mix together.
