As the semester ends and work begins to pile up it can be easy to forget to properly feed yourself. To help you out, our team as given you our favorite college-friendly recipes so you can ace your finals and still eat well. We have rated each recipe on a scale from 1-5 (1 being your 4 year old sister could do it, 5 being you might need to be 18 to handle it). Happy cooking!
Cinnamon Sugar Nutella Sandwich

Ingredients:
- 1 tbsp salted butter
- 1/4 cup sugar
- 1 tbsp ground cinnamon
- 2 slices of bread
- 1 1/2 tbsp nutella
Directions:
- In a little dish mix all of the sugar and all of the cinnamon
- Put the 2 slices of bread in the toaster
- Once toasted, spread the butter on one side of each slice
- Generously sprinkle on the mixed cinnamon and sugar on the buttered sides
- Place one slice of the toast on a skillet with the cinnamon-sugar side down
- Dollop the Nutella in the center of the slice
- Place the other slice on top of the Nutella, making a sandwich
- On medium heat, grill the sandwich for 1-2 minutes
“Yummy Chicken” aka Marinated Chicken

Ingredients:
- 1/2 lb. of Chicken
- 1 cup of Italian Salad Dressing
Directions:
- Place frozen chicken in a tupperware container and cover with salad dressing.
- Once it has thawed some, poke it with a fork to help the marinade sink in (you might also want to cut the chicken into smaller portions)
- once the chicken is completely thawed, remove the chicken from the tupperware and place on a Foreman grill for ~3 minutes or until cooked through
Red Velvet Cookies

Difficulty: 2 (only beecuase it’s so hard to eat all of the dough before putting it in the oven!)
Ingredients:
- 1 box of red velvet cake mix
- 2 eggs
- 1/3 cup of oil
- cream cheese frosting
Directions:
- Preheat the oven to 375 degrees Fahrenheit.
- Mix the cake mix, eggs, and oil together to make the cookie dough.
- Roll the dough into balls, and place on a lightly greased cookie sheet.
- Bake for 8-10 minutes.
- Let the cookies cool before adding frosting, and then enjoy your little piece of red velvet heaven.
Mexican Stir-Fry

Difficulty: 3 (it takes some prep, but usually has leftovers!)
Ingredients:

1 mid-sized white onion

1 large red bell pepper
-
8 oz. of chicken breast

1 medium avocado
-
8 oz. can of black beans
-
1 cup of brown rice
-
½ cup of corn
-
Tabasco sauce (optional)
-
Hummus or sour cream (to taste)
Directions:

Chop onion, pepper and chicken and sautee on medium heat until cooked

Cook rice

Heat up black beans and corn (separately) on the stove or in the microwave until cooked

Cut up avocado into bite sized pieces

Once all the components are ready, mix together

Add Tabasco and hummus or sour cream
