Quick and Easy Lunch Ideas: Spicy Chicken Salad

You only have 45 minutes between classes to go home, cook food, and eat. Easy enough, but spring break is eagerly approaching, and those frozen taquitos probably won’t translate very well into a Cabo-ready bikini-body. Here’s a quick and healthy meal that you can put together in a pinch: 

Spicy Chicken Breast–Throw a little Mrs. Dash Spicy Blend on your chicken before you sauté it in light olive oil. While your chicken cooks, assemble a green salad.

Baby Green Mixed Salad–This salad is triple-washed and full of nutrients! Add a few chopped green onions and some Mrs. Dash garlic seasoning and you’re good to go!

Homemade Vinaigrette–I feel the healthiest when I eat clean foods. A salad dressing with two ingredients (and nothing I can’t pronounce) is not only delicious, but so easy. I combine a tiny splash of light olive oil with several splashes of red wine vinegar. 

Shredded Parmesan–A little cheese makes everything better! Sprinkle a bit of shredded Parmesan cheese before tossing your salad–it adds another dimension to the flavors of your dish!

There you have it! If you don’t have time in your busy schedule to prepare chicken, make it the night before and either microwave it or keep it cold for a refreshing spring salad.
