Seven Fruity Summer Recipes to Kick off Your Summer

Now that the semester is coming to an end, you may actually have the time– and the functioning kitchen– to make food that comes from an actual recipe. Since we’re approaching summer, the beloved season where fruit is abundant at the local grocery stores, why not make some sweet treats to enjoy while sitting outside?

1. Strawberry and Pistachio Frozen Yogurt Bark 

Not only is this healthier than some alternatives, it also makes a delicious light breakfast– something sweet to add alongside your eggs and bacon. It sure beats your average Dannon strawberry yogurt!

2. Orange Chocolate Chip Scones

You can’t deny that chocolate chip scones are one of the best pastries ever, so why not add a little zest, too? If you’re not that fond of orange, opt for a lemon instead– all you need is citrus zest and juice, so you can substitute with any similar fruit. Go to town!

3. Frozen Yogurt Granola Cups

Little yogurt cupcakes with fresh frozen fruit on top? Yes, please. The granola at the bottom makes for a perfect stabilizer and adds an oaty crunch.  Make them for one of your uppity aunt’s garden parties, or for indulging on a hot, lazy day.

4. Fruit and Wine Sorbet

My only question is why this isn’t available premade in my local grocer’s ice cream section. For those of you over 21, this is an icy take on white wine with a fruity twist. Enjoy responsibly!

5. Fruit Sushi

With six different fruits rolled into one, single-bite cylinder, you’ll certainly feel as though you’ve gotten the most out of this dessert. Although it’s a bit intricate to make, you can’t argue that it isn’t a fun process, plus the end result is delicious!

6. Seven Layer Fruit Dip

The queen of all dessert dipping sauces, this will make all of your friends and family happy; that is, if you actually decide to share it with them… It’s best enjoyed with graham crackers, cinnamon sugar pita chips, or, of course, a spoon.

7. Chocolate Covered Frozen Banana and Peanut Butter Bites

What’s better than peanut butter and bananas? A frozen chocolate coating on the two sandwiched together, that’s what! Decadent and rich with the perfect amount of soft sweetness, this easy recipe only requires three ingredients and is perfect for a grab-and-go snack!
