Fall is upon us and it is finally appropriate to break out all things pumpkin! I mean at least for me; pumpkin everything has been available since September and I’m a little late to get on the train.  So besides everything pumpkin, I have a few food favorites for the fall season that I think everyone deserves to know about.  They are a big part of the fall tradition in my house and I believe everyone deserves to have them in their lives this fall season.

First up is pumpkin bread.  Trader Joe’s has sold this product since 2008 and I think it is shamefully overlooked.  The dessert combines everything I love about fall and puts in into one delicious loaf of bread.  With its pumpkin goodness and decadent aroma of spices, your house is sure to smell like fall in no time once it’s in the oven.

Here’s what you need:

  • One box of the heavenly mix

  • 2 eggs

  • ½ cup of vegetable oil

  • 1 cup of water

Combine ingredients in a mixing bowl and grease a bread pan (of you don’t have a bread pan you can switch it up and use a cupcake/muffin pan) bake for 55-60 minutes and voila! It’s ready to be enjoyed.

My second must-have fall recipe is my mom’s famous green bean casserole.  My grandma used to make it every Thanksgiving and since she’d passed away my mom has taught me how to make it and it’s one of the easiest things to make.

Here’s what you need:

  • 3-4 cans of cut green beans (drained)

  • 1 can of fried onions

  • 1 can of cream of mushroom soup

  • 1 cup milk

  • cooked bacon bits

Mix milk and soup together in a bowl, mix with green beans and most onions and bacon.  Spread into a casserole dish and crumble more onion on top.  Bake at 350° for about 40 minutes.

Your friends and family members are guaranteed to love it!

My third and final recipe is roasted pumpkin seeds.  My sister, cousins, and I would always make these every year after carving pumpkins.  They’re super simple to make and they always make me think of Halloween.

Here’s what you need:

  • A baking pan

  • Pumpkin seeds

  • Salt and other preferred spice

  • Oiled baking sheet

Dry the seeds and spread them onto the baking sheet and sprinkle some spices and salt on top of them.  Bake for 45-50 minutes and enjoy this simple but delicious treat.
