Eating healthily isn’t always an easy option, or a desirable one—why eat celery when things like chicken fingers exist? Why go through the hassle of shopping for healthy cooking ingredients when you can order Dominoes, AND have it delivered? And why spend money on groceries in the first place when you can get a quesadilla from the Lair on your meal plan?

Health and lifestyle can be difficult entities to control in the life of a college student. Each day is fast-paced, academics are demanding, weekends are busy, and bank accounts always seem to be empty—it is often so much more convenient and inexpensive to grab fast food or make Easy Mac than to choose healthier options. These are factors that Dr. Bette Ackerman’s health psychology class considered when they came up with the idea to found a new organization on campus called Rhodes Eats.

Rhodes Eats, which plans to launch within the next few weeks, will consist of a website including webcast demonstrations on how to make easy, quick, healthy meals. It will also include articles about eating healthily on a college budget, ideas for healthy eating around Memphis, healthy recipes, cooking tips, and more. The organizations hopes to create an outlet for students who need a break from the Rat and the Lair, students who want to eat healthily but are maybe not so savvy in the kitchen, and students who are just looking for some new, healthy cooking ideas.

Some of their innovative ideas for webcasts are the following: Asian cuisine, healthy meals under $7, meatless Monday, dorm room dining, five-ingredient meals, wok Wednesday, healthy treats and sweets, Sunday brunch, a healthy approach to fiesta, packing for a picnic, and trip to the farmer’s market.  Check out the survey monkey below to vote on what you’d like to see and follow them on social media to stay up to date on all they have to offer!
