Cooking Advice for Those Living Off Campus

This article is written by a student writer from the Her Campus at Binghamton chapter.

It can sometimes be challenging adjusting to living off campus and having to cook for yourselves. It can take time getting used to not eating every meal in the dining hall.  For some people, living off campus is their first real experience cooking.  We all have busy schedules filled with lots of activities, meetings and schoolwork.  So, it can be difficult to balance getting everything done, while still finding the time to cook.

One of my biggest pieces of advice in regard to cooking is to meal prep.  At the beginning week, my roommates and I usually try to plan our meals for the week.  Also, if you know that you have an especially busy week coming up, Sundays are a great to spend cooking, making meals in advance that way during the week all you have to do is heat up the meal.  You can always freeze meals if you think you are not going to eat something in the near future.

Breakfast:

-Yogurt with fruit

-Avocado with an English muffin

-If you have a little more time on your hands you can always make eggs or an omelet

Lunch

-Lunches can always be prepped the night before and defintley do not need to include anything too complicated

-If I ever have a leftover piece of chicken or salmon you can place it over a salad, which is always a tasty option

-Quinoa is an easy dish to make as well

-If you have time and are home you can heat up a bowl of soup including butternut squash soup or vegetable soup

Dinner

-Simple is always a good route to take for making dinner

-Remember to stick with the easy meals and some of my favorite dishes include tofu or chicken stir fry, tacos or pasta with meat sauce

-For sides you can make rice, potatoes and always include a vegetable in your meal
