Lose the Freshman 15: My Diet Amendments

Hey collegiettes™!

Well, as you may know, today begins the Lenten season for Catholics. As a “cafeteria Catholic” (and the fact that I live at home), today and every Friday until Easter I won’t be eating meat. communion

This, of course, only occured to me as I was about to eat my Healthy Choice chicken noodle soup at work.

So, I had no choice but to skip lunch and I’m on a college student’s budget, so eating out wasn’t exactly an option. However, I ate my Sargento string cheese snack and just drank my latest addiction, Honest Tea. Ok, and maybe some leftover fortune cookies in my desk…

For some reason in the past, abstaining from meat once a week seemed like such a chore, but now I’m looking at it as a great new addition to SELF magazine’s Jump Start Diet.

This is also a great excuse for me to try new recipes and meals included with the diet as well! For lunch my options include, but are not limited to, a black bean wrap, a quinoa salad bowl, a citrus salad, and Amy’s Kitchen spinich salad. A bowl of lentil stew, Indian shrimp and squash, baked salmon, and miso soup are some of the Jump Start Diet‘s meat-free dinner options.

Tonight I will be picking up some new items for the latest additions to my weekly meal plans!
