Lose the Freshman 15: Yummy, Fruity (and Healthy) Summer Recipes!

Hey Ladies!

I’m happy to report that I’ve lost another two pounds!

But with this weight loss, comes a little bit of apprehension about the next couple of weeks. See, sticking to Self’s plan has been pretty easy so far. With my busy schedule at school, I’ve been easily able to distract myself from temptation by doing homework. But once summer hits, I’ll have more free time than I know what to do with so I’ve decided to round up a few healthy snack recipes from Self’s website in preparation. Check them out below:

Wild-Berry Pops
38 calories per serving

Ingredients

1 ½ cups fresh blackberries
1 ½ cups fresh blueberries
1 cup lowfat plain yogurt
1 cup prepared blueberry juice
2 tablespoons honey
2 table spoons fresh lemon juice

Preparation

Blend ¾ cup of blackberries and ¾ cup of blueberries with yogurt, blueberry juice, honey, and lemon juice in blender until smooth. Stir in remaining blackberries and blueberries. Pour into molds and add sticks. Freeze for 6 hours.

Mango-Yogurt Sorbet

131 calories per serving

Ingredients
10 oz chopped frozen mango
1 cup 2 percent Greek yogurt
3 tablespoons honey
2 tablespoons orange juice

Preparation

Blend all ingredients together in food processor. Garnish with a slice of mango.

Tropical Treat Smoothie

174 calories per serving

Ingredients

½ cup sparkling water
¼ light coconut milk (I substitute with Zico Coconut Water to save some calories)
1 cup diced mango
1 ½ cups cubed pineapple
1 tablespoon fresh lemon juice
¼ cup fresh mint
2 tablespoons agave
1 teaspoon orange zest

Preparation

Blend all ingredients together in blender. Serve immediately.
