4 Quick and Easy College Recipes

Often times, college students may not have the healthiest of diets. Running around between classes and staying up late finishing esays, can be condusive to skipping a meal- which I am guilty of doing, or wolfing down a pepperoni pizza at 3 a.m. While we may not always eat the healtiest of foods and may consider a microwave Stouffer’s meal to be five star cusine. So here are the five quickest and easiest meals to make if you are on the run or have a miniscule sized dorm kitchen.

1) Italian Style Spaghetti: For those pasta lovers out there, pasta is always a quick and easy meal to whip together and you can’t really mess up pasta- unless you don’t cook it long enough. You can also get creative with different types of pasta and sauce. You don’t have to necessarily go with the classic toamtoe sauce and meat balls, try mixing it up- try pumpkin ravioli’s in a sage cream sauce, or penne with fresh basil pesto. For now, try this basic spaghetti recipe, which only takes 10 minutes. Check out this version from “ready set eat.”

2) Ground Beef Tacos: Always a fun and yummy choice. If you are nervous about cooking beef thouroughly and safely, then remember this tip- the beef has to be completely browned and there should be no pink in sight. If the beef is stil pink in the middle, then give it some more time. Other than that, tacos are very easy and you can make enough so you have leftowvers for a few nights. Try the basic spanish rice, black beans, cheese and salsa. Of if you get a little more adventurous, you can make fish tacos with tartar or aioli sauce and coleslaw. 3) For a super health and organic option, try mixed green salads and stcik em’ in mason jars so you can take on the go with you. My personal favorite is a cobb salad with an autumn twist- pumpkin seeds sprinkled on top. Or, try these recipes from buzzfeed.

4) Stuffed baked potatos: This is probablt the lengthiest recipe on the list since you have to bake the potatos first. However, to help speed up the process, you can microvive steam your potato instead of baking it in the oven. Here are some of my favorite recipes from the foodnetwork.
