Recipe: Halloween Vegan Pumpkin Rice Krispies

This article is written by a student writer from the Her Campus at Carleton chapter.

For the past 3 years, I have been a student living a vegan lifestyle and it has only benefitted me for the greater good. It is not as expensive as people are worried it may be. I was able to find affordable foods that not only taste good but make me feel good. In fact, I have an instagram account dedicated to my lifestyle. I hope that my vegan recipes are an inspiration to others.

Here’s a vegan recipe for all your spooky season needs:

Vegan Margarine or Butter

3 tbsp vegan margarine/butter:

The first step is to melt the butter in a large pot on medium-low heat

Dandies Vegan Pumpkin Marshmallows

1 bag of Dandies vegan pumpkin marshmallows:

Add the pumpkin marshmallows and allow them to melt.

***Once they are melted, you can add orange food colouring to get more of a vibrant pumpkin colour!

Puffed Rice

6 cups puffed rice crispies (I used brown rice):

Take off the heat and add the puffed rice crispies. Using a non-stick spatula is easiest at this point. Stir until well combined.

Grease hands, it’s about to get messy! Shape them into any sized mini pumpkin you desire!

Dairy-free Chocolate Chips

Melted dairy-free chocolate chips:

Melt some dairy-free chocolate chips and get as creative with the faces as possible!

Vegan Pumpkin Rice Krispy Treats!

Just like that, you’re finished – and ready to share with family and friends. No trick, these treats are an easy and delicious way to celebrate Halloween!

Enjoy this great alternative to a halloween treat!
