Guilt Free Peanut Butter Oatmeal Cookies

I’ve made a discovery and couldn’t help but to share it with you.  Healthy peanut butter oatmeal cookies from The Skinny Fork. Yes, you heard me correctly, healthy! These cookies are deliciously AMAZING, and are the perfect fix for your sweet tooth while trying to achieve the infamous summer body. The cookies take about 15 minutes to put together and 20-30 minutes to bake, which is the perfect amount of time for a study break. So, put the books down (just for a bit) and get baking because these cookies collegiettes are worth it!

Healthy Peanut Butter Oatmeal Cookies

2 Ripe Bananas, mashed

1/3 C. Reduced Fat Peanut Butter

2/3 C. Unsweetened Applesauce

1 Tsp. Vanilla

1/2 Tsp. Salt

1/2 Tsp. Cinnamon

Dash of Ground Cloves

Dash of Ground Nutmeg

1 1/2 C. Old Fashioned Oats

1/4 C. Nuts

1/4 C. Semi Sweet Chocolate Chips

1/4 C. Reduced Fat Unsweetened Shredded Coconut

Directions:

Preheat oven to 350 degrees. Mix together the bananas, peanut butter, applesauce, vanilla, salt, cinnamon, ground cloves, and ground nutmeg until well stirred. Add in oats, nuts, chocolate chips, and shredded coconut and stir. Next, spoon 2 tbsp. of the mixture onto a cookie sheet leaving one inch between each cookie. Finally, put cookies in the oven and bake for 20-30 minutes. Let cool and enjoy!
