5 Recipes to Get You Excited About Breakfast

This article is written by a student writer from the Her Campus at UNL chapter.

Sometimes breakfast is something we all crave, but other times it’s almost annoying having to prep and eat breakfast when you have zero time in the mornings. Here are some recipes that are healthy and can satisfy anyone’s appetite.

1. Avocado Toast with Chili Flakes, S&P

This is a pretty easy go-to. Throw some bread in the toaster and spread some avo on that and you’ve got yourself a pretty substantial breakfast on the go.

2. Smoothie Bowl

If you have some time on your hands in the morning and want to work on your food arranging skills, this is for you. Prepare any smoothie you’d like and pour into a bowl instead of a glass. Then layer your favorite toppings in a beautiful arrangement. Some of my favorites are blackberries, chia seeds, walnuts, sliced bananas and blueberries. The combinations are endless.

3. Oatmeal

I love this hearty breakfast! Oatmeal is so versatile and satisfying! I usually keep steel-cut oats on hand all the time for when I need something to fill me up. It keeps me full throughout the day when I know I won’t get around to eating lunch until 3 p.m. I add honey for some sweetness and then to that add some fiber-filled flaxseed, sliced almonds, my favorite fruits and sometimes a heaping spoonful of PB for protein. Anyway you fix it, it’s sure to be a great breakfast choice.

4. Banana Pancakes

Did you know that you can make healthy pancakes?! Crazy, right? Here’s a great recipe that I go to! This recipe is also a great way to get rid of bananas that are borderline expired! I like to add more toppings to feed into any craving I have that morning. My all-time favorite are chocolate chips. You can add whatever you like!

5. Toasted Bagel Sandwich

Bagels are a great thing to keep on hand. You can practically pair them with anything sweet or savory. I love a good bagel sandwich, though. Toast your favorite bagel and add a fried egg, avocado, spinach and tomato! Yum.
