How Meal Prepping Will Change Your Life

Like most college students, I have an overwhelming schedule which has given me no time to cook or take care of myself. After a month of struggling, my mom came down and made me meals that I can just warm up whenever I needed them.

They were a lifesaver and now I am completely obsessed with meal prepping for my week. I also believe this could help anyone with a busy schedule, so here are some of my favorite things to meal prep:

Chicken

This is honestly my favorite thing to meal prep because you can cook a lot of it and it can go with basically everything. Personally, I like to bake it so I can have it in the oven on Sunday while I work on my homework and get ready for my week. Then for lunch and dinner I just warm it up and throw it in a salad or eat it with microwaved frozen veggies.

Breakfast sandwiches

This is something my mom made for me; so you basically take 6 eggs, put them in a cupcake tin with some salt and pepper for 30 mins at 350 and you have the egg part of the sandwich. Then you can put the egg on some bread (I use 100 calorie English muffins) with either sausage or bacon and then top it off with some cheese. You can wrap them up individually with some tin foil. Boom! You have six breakfast sandwiches for the week.

Overnight Oats

Another life-saver for breakfast is overnight oats. There are so many ways to do this, but personally I like to mix yogurt with some uncooked oatmeal and let it sit overnight. Then in the morning I just add chopped strawberries and blueberries and walk to class.

Pasta

If you are a pasta lover, then this is totally for you! Just cook a whole box of pasta on Sunday and then during the week just warm it up with some sauce for dinner. You can also make some baked spaghetti so all you have to do is warm it up and top it off with some cheese.
