The Dish: Finals Week S’mores Ice Cream

This article is written by a student writer from the Her Campus at UFL chapter.

Unless they’ve started already, finals are coming up fast. I’m sure we are all a little stressed., and with stress comes stress eating. Although I wouldn’t encourage too many unhealthy snacks, I happened to find a delicious recipe that can serve as a reminder that summer is almost here: s’mores ice cream. This is the perfect snack to have with friends or when you are finishing up that last all-nighter!

Here’s what you’ll need:

  • 1 ½ C of milk
  • 3 C of heavy cream
  • 1 1/8 C of granulated sugar
  • 1 ½ tablespoons of vanilla extract
  • 1 C of graham crackers (crushed)
  • 1 C of chocolate chips or chunks of your favorite chocolate bar
  • 1 C of miniature marshmallows
  • Ice cream cones

Here’s how to make them:

  1. In one bowl, mix the milk and sugar together until the sugar is dissolved.
  2. Add the heavy cream and vanilla extract. Mix well.
  3. Pour your mixture into a freezer bowl, and let it freeze for about 30 minutes.
  4. Put the ice cream into a freezer-safe container, add the graham crackers and chocolate, and stir them into the ice cream until combined. Let it freeze until it reaches a good consistency.
  5. Scoop the ice cream into a bowl or your favorite ice cream cone!

That’s all you need to do for a delicious combination of s’mores and ice cream! Good luck with finals, and have a great summer, collegiettes™!
