Collegiette Recipes: Avocado Egg Baskets

Hey, collegiettes! Here at HC we are dedicated to promoting a healthy lifestyle, so we want to offer another clean recipe for you to try this week- or any other! This recipe makes an Avocado Egg Basket, an absolutely delicious and clean meal option. It offers plenty of nutrients and has great health benefits as it offers the right amount of healthy fats, protein, and, of course, yummy flavor!

For this recipe, here’s what you will need:

·       1 avocado

·       2 eggs

·       Feta cheese

·       Mushrooms

·       Grape tomatoes

·       Pepper, parsley, or your spices of choice 

·      Bacon or vegetarian bacon* and Sriracha sauce** (optional)

Note: If these toppings do not appeal to you, feel free to modify the recipe any way you like! Some other great ideas would be to use bell peppers, onions, chives, sour cream, cheddar, salsa, spinach, chicken, etc. Avocado and egg are both very neutral flavors and go well with many different toppings. Just remember, the toppings are what can add or take away the health, so if you’re trying to make this a clean meal, stick to veggies.

Here’s what to do:

First, preheat oven to 400 degrees. After that, crack both eggs into a bowl without breaking the yolk. Cut the avocado in half (easiest if you score all the way around and twist) and remove the seed. Scoop out a very small amount of the avocado so you can put the egg in. Wrap the avocado halves in aluminum foil so they keep their shape and, very carefully, with a spoon, scoop the yolk into the halves. Proceed to fill the halves with as much of the remaining whites as you can. Finely chop the mushrooms and sprinkle on top of the halves. Sprinkle feta on the halves and top with a little tomato! When you’re all finished, sprinkle some pepper and a little bit of parsley on top. Pop it in the oven for about 15 minutes (or until the egg is not runny) and voila! You have a great and healthy meal that is sure to please.

*If bacon is something you would like to add, chop it into small pieces and cook in a frying pan until done. Top avocado with bacon after it is pulled from the oven.

**Sriracha sauce adds a nice spiciness to the meal and tastes great with this particular recipe!
