I confess, I didn’t even know what kale was until a few years ago, when a family friend introduced it as a “superfood”. What was all that hype about, that celebrities like Heidi Klum and Jennifer Aniston raved on and on about it to the media? So, I decided to do a little bit of research myself, and it is just as they say—the benefits of kale have exceeded my expectations.
Here are some advantages of eating kale:
- It has iron, beta-carotene, and Vitamins A, C and K.
- It contains 45 different flavonoids, which is what gives it antioxidant and anti-inflammatory benefits.
- One of kale’s phytochemicals, sulforaphane, aids the body’s enzymes in flushing carcinogenic substances out of your system.
- Research has suggested that kale is effective as a detoxifier and help lower cholesterol levels.
Luckily for you Bruins (especially those who live on the Hill), our very own Bruin Plate offers kale on a daily basis. You have no excuse for not filling your plates with all this green goodness!
