3 Delicious Quick and Easy Breakfast Ideas

Life can get hectic at times, especially as college students. We often neglect our most important meal of the day, breakfast, due to our lack of time, or better yet, our excuse that we do not have time. Eating breakfast should not be neglected. It should not be difficult nor should it be unhealthy. It is important to fuel our bodies with food that give us a boost of energy, promoting our well-being throughout the day. Below are 3 of my all-time favorite breakfast ideas that are quick and easy to make for those of us who live life on the go.

1. A Classic Pancake

Eating healthy does not mean sacrificing your favorite meals, like enjoying the classic pancake for breakfast. Instead, it is simply finding alternate ingredients that will nourish your bodies, while still giving it the optimal satisfaction food should provide. This 5 minute recipe is the perfect combination of both.

This recipe requires only two ingredients: Kodiak Cakes (flavor of your choice which include protein in the batter mix) and just water! Yes, it is that simple!

For my serving of my pancakes shown below, I used 1 cup of the pancake mix and around ¾- 1 cup water. The water amount depends on how thick you would like your pancake to be. This makes around to 5-6 pancakes.

To prepare, simply place the mix onto a pan, with some non-stick cooking spray, and cook for 1 minute on one side and around 30 seconds on the other on medium heat. Repeat this until all your pancakes are done! Then, garnish them with some Belgian Chocolate, as I have done, and organic maple syrup along with your choice of fruit. Once done, you’ll have the perfect filling and delicious breakfast.

2. Avocado on Toast … with a Twist

One of my ultimate go-to breakfasts is an avocado toast. It is quick. It is simple. It is oh-so delicious. But, sometimes it isn’t filling enough. This recipe is the perfect add on to a simple avocado toast in just 10 to 15 minutes.

The ingredients for 1 serving (as shown in the picture) include: 1 100% Whole Wheat bagel, 2 egg whites (an entire egg works perfectly fine, it is a choice of preference), half of one Persian cucumber, around ½ an avocado, a handful of kale, 1 slice of oven roasted turkey breast, sliced bell pepper to your liking, Everyday Seasoning (found at Trader Joe’s), a dash of olive oil, and 1-2 cups of watermelon for fruit on the side.

To Prepare Simply:

  • Toast your bagel and spread the avocado on evenly

  • Saute the kale, bell pepper, and turkey with a dash of olive-oil for around 2-3 minutes, then add the egg whites and cook completely.

  • Add the egg to the bagel, and put the sliced cucumber pieces on top, then use your Everyday Seasoning on top to your liking!

  • Lastly, cut up the watermelon and enjoy your meal

3. Cacao & Beyond Smoothie!

My latest obsession is this healthy version of a chocolate smoothie. It is the perfect meal to start off the day or satisfy my sweet tooth at any time in under just 10 minutes!

This recipe requires: 1 tablespoon of cacao powder, 1 tablespoon of natural peanut butter, 1 (preferably, but not required to be frozen) frozen banana, a handful of ice, and 1 cup of almond milk. I used my Nutribullet, but a blender works perfectly fine.

To Prepare Simply:

Add all the ingredients together and blend away! Note: Add more milk for a more liquid consistency and vice versa.

Because this is a lighter breakfast, I would recommend to have this on days you’ll have an earlier lunch or are not as hungry. Or, to make it a fuller meal, blend oats with the mix and some Belgian Chocolate on top, as shown below, for an even more nutritious meal.

Note: These recipes can be altered to your preferences! The goal is to eat a healthier and more nutritious breakfast every morning without spending a lifetime in the kitchen.
