Want to do something fun and different with your friends? Have an Italian night! Whip up these healthy, budget-friendly Italian meals and surprise your friends or significant other! 
 
 
Mediterranean pizza
 

Ingredients:
·     One pack of  pre-made pizza dough (Pillsbury, Tiseo’s, Boboli, etc.)
·     1 TBS of olive oil
·     2 TBS of chopped garlic
·     1/2 cup of pesto sauce
·     1 cup of sundried tomatoes, chopped
·     1/3 cup of mozzarella or feta cheese
·     2 TBS of chopped red onion
·     2 TBS chopped black olive
·     1 grilled chicken breast, chopped (Optional)
 
Prep:
Preheat oven to 375. Roll out your pizza dough as thick or as thin as you wish on a pizza stone. Evenly spread, in order, the oil, garlic and pesto on the raw pizza dough. Spread the sun dried tomatoes all around the pizza and the mozzarella or feta cheese spread evenly on top. Add the onion, olive and optional chicken on top. Cook for 10-12 minutes.
 
 
Grilled Chicken Parmesan
 

 Ingredients:
·     2 cups of whole wheat spaghetti or pasta
·     One grilled chicken breast
·     2 TBS of marinara sauce
·     2 TBS of mozzarella cheese
·     a pinch of Cajon spice
 
Prep:
Start by boiling 3 cups of water in a pot. When boiled, add pasta. Grill chicken breast with Cajon spice rubbed on both sides of chicken. Pop the cooked chicken in the oven (350 degrees) with marinara sauce and cheese on top. When cheese melts, take chicken out of the oven and serve over the cooked pasta.
