Fresh and Fit Recipe: Avocado and Tomato Grilled Cheese

   On a college budget, maybe you’re getting tired of your regular, plain grilled cheese. Here’s a simple rendition of the classic that you can easily make on a college budget that is delicious, easy and healthy- Avocado and Tomato Grilled Cheese. Um, how delicious does that sound? I can already tell you that this is a new favorite meal in my apartment and I’d be happy to live off of this…at least until next week’s fresh and fit recipe.

All you need for this simple recipe is an English muffin(or whatever you want to make your sandwich on), a tomato, an avocado, and fresh mozzarella.

  1. Turn on the stove to start heating up the pan.

  1. Place the ingredients on top of your English muffin making sure that there is mozzarella cheese touching both sides of the whole-wheat English muffin (i.e. English muffin,mozzarella, avocado, tomato, mozzarella, English muffin.)

  2. Now, putting butter toast one side on the English muffin until brown and the cheese starts melting and flip it over.

  3. Enjoy you meal!

For added protein, if you are feeling adventurous, you can add bacon to the mix!
