Fit and Fresh Recipe: Eggplant Pizzas

                                                                                                                                                                                             Half way through the semester, you’re all nighters have probably begun which probably means your late night pizza cravings have begun as well. Next time that unhealthy urge attempts to take over all your thoughts, try this version to kick the late night munchies.

 

Here’s what you need-

1 large eggplants (cut into ¼ inch slices)

1 tablespoon salt

1 tablespoon of oil

1 teaspoon of Italian seasoning or oregano

salt and pepper to taste

1 cup of pizza sauce

1 cup shredded mozzarella cheese

1 ounce pepperoni (or your favorite pizza topping)

 

First, start with the eggplant.  Sprinkle it with the salt and let it sit on paper towels for 20 minutes before wiping the eggplant dry. While waiting to wipe your eggplant dry, preheat the over to 400 degrees

Second, brush the slices of eggplant with oil and season with the Italian seasoning (or oregano), salt, and pepper..

Roast the eggplant in the oven until it starts to turn tender for about 15- 20 minutes. (CAUTION: DO NOT allow the eggplant to become soft or mushy. It’ll become impossible to eat and just become a huge mess.)

Finally, dress the slices with pizza sauce, cheese, and your topping. Broil the prepared slices until the cheese has melted (about 3-5 minutes).

 

Here’s another option for cooking the eggplant when the season warms up. Instead of baking it in the oven, try grilling the eggplant instead.

 

This recipe only has 212 calories. So much better than that late night delivery you’d be ordering! There are also plenty of easy pizza sauce recipes found online if you want to make it even healthier!
