It’s November and officially getting cold in New Orleans, which means it’s the perfect time to start cooking some delicious fall meals! My favorite lately has been ground turkey chili which is filling, cheap, easy to make, and most importantly, delicious!

Ingredients:

  • 1 package of lean ground turkey meat
  • 1 white onion (Chopped)
  • 1 green bell pepper (chopped)
  • 1 yellow bell pepper (chopped)
  • 4 garlic gloves (minced)
  • 1 can black beans (rinsed and drained)
  • 1 can corn (rinsed and drained)
  • 1 can kidney beans (rinsed and drained)
  • 1 can diced tomatoes
  • 1 cup low sodium chicken broth
  • 1 tablespoon olive oil
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon ground black pepper
  • ¼ teaspoon salt
  • ¼ teaspoon cayenne pepper
  1. In a large nonstick skillet, cook the turkey chili, bell peppers, garlic and onion with some olive oil over medium heat.
  2. Transfer to large pot. Mix in all other ingredients. Bring to a boil and then reduce to a simmer. Simmer for 30 minutes.
  3. Garnish with a dollop of nonfat greek yogurt, reduced-fat shredded Mexican cheese blend and chopped cilantro.

Note: To make this meal vegetarian, substitute chicken broth for vegetable broth and don’t include ground turkey.
