The best part of fall is the pumpkins! Pumpkin spice lattes, pumpkin pie, pumpkin carving—we’re in love with it all! Tailored to the health conscious, convenience seekers, adventurous baker, and anyone who loves pumpkin, this is your ultimate guide to easy pumpkin recipes.

Healthy Recipes:

 

Skinny Pumpkin Spice Latte

1cup skim milk

2 tbsp. canned pumpkin

2 tbsp. sugar

2 tbsp. vanilla extract

½ tsp. pumpkin pie spice

2 shots espresso

 

1. Stir together milk, pumpkin and sugar on medium heat, until steaming

2. Turn off heat and whisk in vanilla and spice

3. Pour into mug and add espresso

 

Pumpkin Oatmeal

2 cups of Instant oats or if you have some time steel cut oats

½ cup of canned pumpkin

Pinch of cinnamon

Spoonful of walnuts or pecans

 

1. Cook the oats with water, skim milk, or almond milk

2. Add canned pumpkin, cinnamon, and nuts

 

Pumpkin Granola (Two Peas & Their Pod recipe)

5 cups rolled oats

1 tsp. pumpkin pie spice

1 tsp. cinnamon

½ tsp. nutmeg

Pinch salt

¾ cup brown sugar

½ cup pumpkin puree

¼ cup applesauce

¼ cup maple syrup

1 tsp. vanilla extract

¾ cup dried cranberries

½ cup pumpkin seeds

Preheat oven to 325° F

 

1. Combine and mix oats, spices, and salt

2. Whisk, until smooth, together brown sugar, pumpkin puree, applesauce, maple syrup and vanilla extract.  Pour wet ingredients into oat mixture and stir until the oats are evenly coated

3. Line baking pan with parchment paper and evenly spread the mixture

4. Bake for 20 minutes. Remove pan from the oven and stir. Bake for an additional 15 minutes or until the granola is golden and crisp. Remove from the oven and stir in dried cranberries and Pumpkin seeds. Let cool completely.

The Convenience Seekers:

 

Pumpkin Mug Cake

1 egg

2 tbsp. skim milk

¼ tsp. vanilla extract

¼ cup pumpkin puree

7 tbsp. all purpose flour

¼ cup brown sugar

¼ tsp. ground cinnamon

Pinch salt

 

1. Mix all ingredients in a coffee mug

2. Microwave for 1 min 30 seconds. Inspect for explosions, if safe continue to microwave for another 1 min 30 sec.

3. Garnish with whipped cream. Enjoy when warm

 

Pumpkin Spice Shake

1cup vanilla ice cream

½ cup skim milk

2/3 cup canned pumpkin

¼ cup brown sugar

¾ tsp. pumpkin-pie spice

 

1. Blend first five ingredients in a blender

2. Pour into glasses

3. Top with Cool Whip and/or Ground cinnamon

 

Pumpkin Pancakes

2 cups white whole-wheat flour

1 tbsp. baking powder

Pinch ground ginger

Pinch ground nutmeg

Pinch salt

1 tsp. ground cinnamon

2 tbsp. brown sugar

2 eggs

¾ cups skim milk

2 tbsp. canola oil

2/3 cup canned pumpkin

 

1. Heat griddle over medium heat

2. In a large bowl whisk together all ingredients

3. Spray griddle with cooking spray and spoon 1/4 cup of batter onto the pan.

4. Flip when bubbles begin to show and grill till both sides are golden brown.

5. Garnish with syrup, agave nectar, cool whip, fruits, and or toasted pecans

The Adventurous bakers:

 

Pumpkin Pie (Paula Deen recipe)

1 8-ounce package of softened cream cheese

2 cups canned pumpkin

1cup sugar

¼ tsp. salt

1egg+2 egg yolks, slightly beaten

1cup half-and-half

½ stick melted butter

1 tsp. vanilla extract

½ tsp. ground cinnamon

1 piece pre-made pie dough

Whipped cream, for topping

Preheat oven to 350° F

 

1. Place pre-made pie dough down into a (9-inch) pie pan. Press down along the bottom and all sides and pinch edges together. To firm dough, place pan into the freezer. After an hour, fit a piece of foil to cover the inside of the shell completely. Fill the shell with pie weights and place it in the oven. Bake for 10 minutes, remove the foil and weights and bake for another 10 minutes.

2. Beat cream cheese with a hand mixer and combine the pumpkin. Add the sugar and salt, and beat until combined. Add the eggs, half-and-half, and melted butter, and beat until combined. Finally, beat in the vanilla and cinnamon.

3. Pour filling into the warm piecrust and bake for 50 minutes.  Cool pie to room temperature on a wire rack.

 

Non-Bakers

Not much of a baker? That’s okay! My favorite instant box mix is Krusteaz’s Pumpkin Spice Quick Bread. Already prepared, all you need to do is to add water, oil, and eggs. Try different variations of this mix like cupcakes, muffins, or pancakes.
