Pumpkin pie isn’t the only way to get your pumpkin fix! If Thanksgiving wasn’t enough to satisfy your craving, these three recipes are delicious, guilt-free, and full of pumpkin flavor.

 

Pumpkin Pie Yogurt Parfait

Ingredients:

½ cup pumpkin puree

1 TBS maple syrup

½ tsp ground cinnamon

2/3 cup Greek yogurt

1/3 cup granola

sliced strawberries (optional)

 

Instructions:

  • In a small bowl, mix the pumpkin puree with the maple syrup and cinnamon.

  • Serve the parfait in a glass, alternating between pumpkin, yogurt, and granola layers. Top with strawberries if you choose!

 

Homemade Pumpkin Spice Latte:

Ingredients:

1 cup almond milk

1 cup hot brewed coffee

2 TBS pumpkin puree

2 TBS pure maple syrup

½ tsp pumpkin pie spice

 

Instructions:

  • Combine all of the ingredients in a high-speed blender, and blend until smooth and creamy.

  • Adjust flavor to taste, and serve warm!

 

Whole Wheat Pumpkin Chocolate Chip Pancakes

Ingredients:

1 cup white whole wheat flour

2 tsp baking powder

¼ tsp salt

1 tsp cinnamon

¼ tsp nutmeg

½ cup pumpkin puree

1 TBS pure maple syrup

1 egg

1 tsp vanilla extract

¾ cup almond milk

1/3 cup chocolate chips

 

Instructions:

  • In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.

  • In another bowl, combine pumpkin puree, maple syrup, egg, vanilla and almond milk until smooth.

  • Combine wet and dry ingredients. Fold in chocolate chips.

  • Coat a nonstick skillet with butter or cooking spray and drop batter onto the skillet once it is heated. Cook about 2 minutes on each side. Enjoy!
