Meal Plan Master: Making the most of your campus dining options!

We all know the dining options on campus can get old. Don’t be afraid to use the kitchen in your dorm or townhouses with the foods supplied on campus to help you mix-it-up!  Here are some easy recipes you can use to make the most of your meal plan!

 

Bistro Stir Fry!

Ingredients:

  1. Veggies from the Bistro

  2. A container of pasta or rice

  3. Olive Oil

Head to the bistro, in the salad bar you’ll find carrots, onions, peppers, and broccoli.  

Bring them home and toss them into a hot skillet with 1 tbsp of olive oil.

Saute the veggies for about 10-15 mins- until the veggies are tender.

Add 1 tbsp of soy sauce or sauce of your choice to the veggies.

While veggies are cooking make a pot of pasta or rice

Mix together and serve hot, season according to taste….

 

Souped up Soup!

Ingredients:

  1. Cave or Bistro soup de’ jour

  2. Vegetable or Chicken broth

Head to either the Cave or the Bistro.

Grab 1 container of the soup de’ jour and your fav veggies from the salad bar.

Bring them home and toss everything together in a small pot  

Add 2 cups of either vegetable or chicken broth

Sprinkle cheese over to top off the dish and serve hot..

 

Mather Mashed Avocado!

Ingredients:

  1. Avocado

  2. Toast

  3. Eggs

Head to Mather. Get on the egg line.

For this dish a fried egg is probably best but don’t be afraid to get your favorite.

Toast two pieces of bread.

Mash the avocado onto the toast

Slide the egg on top!

Add a little salt n pepper.

For more flavor add ketchup or hot sauce.  

 

MATHER MAC N CHEESE

Ingredients:

  1. Pasta

  2. Salad bar cheese and veggies

Go to Mather. Get  a serving of plain pasta

Add your favorite veggies from the salad bar.

Mix in cheese from the salad bar.

Put these ingredients in the microwave and watch your mac n cheese come to life.

When you take your pasta dish out stir the melted cheese, pasta and veggies all together.
