Strath Bakes: Pancakes

Do you love pancakes but haven’t found a recipe that works for you? Look no further, Her Campus Strathclyde has you covered!

These pancakes require literally no preparation time and cook super quick!

 

Ingredients:

– 1 cup plain flour,

– 2 tablespoons sugar

– 2 teaspoons baking powder

– 1/2 teaspoon salt

– 1 cup milk

– 2 tablespoons vegetable oil

– 1 large egg

– 1 teaspoon vanilla extract

 

Desired Toppings:

-Nutella

-Chopped Fruit (bananas, strawberries)

-Bacon

-Syrup

-Chocolate Chips

 

Method:

1. Mix all wet ingredients (milk, vegetable oil, egg and vanilla) together in a bowl, in a separate bowl, mix all dry ingredients (flour, sugar, baking powder and salt).

2. Pour wet ingredients into dry ingredients bowl slowly, whisking until combined. Heat a pan with a little drizzle of vegetable oil.

3. For each pancake, spoon 2 to 3 tablespoons of batter onto your pan.

4. Cook for 1-2 minutes, until the surface of each pancake has some bubbles and a few have burst.

5.  Flip carefully with a spatula, cook until browned on the underside, for 1-2 minutes more.

6. Transfer to a plate and pile high with toppings!!
