Cooking on Campus: Nutella Rice Krispie treats

A recent post on my favorite food blog, the Pioneer Woman, inspired this week’s recipe (www.thepioneerwoman.com). She has some great, usually easy recipes and blog posts about her entertaining life on a ranch in Oklahoma. Her posts are always full of humor, wit and thoughtful insights on the ups and downs of life. I am always telling my friends which new, scrumptious recipe the Pioneer Woman posted about that day. Earlier this week, she posted her recipe for Nutella Rice Krispie treats, and automatically I knew that I would make them this week’s recipe.

I always forget about how much I love Rice Krispie treats and how easy they are to make. They can be sticky and sometimes messy, but they really are a great quick treat. Throw in Nutella and extra marshmallows, and your normal Rice Krispies are bumped up to a whole other level. Rice Krispie treats are good for college dorm cooking because they store easily and last for a long time if stored correctly. And, let’s be honest, what college student doesn’t love Rice Krispies?

All you need is:
• 6 tablespoons salted butter
• 10 ounces, weight large marshmallows
• 1/8 teaspoon salt
• 1/3 cups Nutella
• 6 cups Rice Krispies
• 1-1/2 cup miniature marshmallows
• 5 ounces, weight semi sweet chocolate, melted

1. Melt 4 tablespoons butter in a large saucepan over medium heat. Add large marshmallows and salt. Stir until melted.

2. Once marshmallows are melted completely, add the Nutella. Add the last 2 tablespoons of butter and stir until smooth.

3. Meanwhile, melt the semisweet chocolate either in a double boiler or in the microwave. Let cool.

4. Add Rice Krispies to a large bowl and fold in marshmallow mixture. Once combined, add mini-marshmallows, and stir until all combined.

5. Press mixture into a very greased 9×13 inch-pan. Drizzle chocolate and sprinkle the rest of mini-marshmallows on top.
