Dorm Room Recipe: Pumpkin Vegetable Soup

Sticking with this Halloween theme, I got to thinking about some of my favorite things about fall. One of those things is being able to drink lots of soup (without sweating). I love soup and making soup is so simple as well as satisfying. Last fall break, my friend and I went to her grandmother’s house and made the most delicious pumpkin vegetable soup ever with only a few simple ingredients! I want to share with you this ~special~ “recipe” that I’ve been loving, which you can make from your dorm room! We used ingredients that were easily found in groceries and were extremely affordable.

Ingredients:

Vegetable broth

Olive oil

Chopped celery

Chopped carrots

Chopped pumpkin

(optional) Chopped potatoes

Sea salt

 

Steps:

First, take 4 cups of vegetable broth (I really like the Trader Joe’s broth), and bring to a boil.

Add 3 tablespoons of olive oil to the broth

Then take your chopped veggies starting with the hardest (2 carrots, 1 cup celery, 1 cup pumpkin) and add it to the broth. This picture actually shows how thin I like to cut my celery. That way is it neither undercooked nor overcooked after being added to the broth. Same goes for carrots. 

Add in sea salt until you achieve your desired level of saltiness.

And voila! That’s all it takes! So simple, and sooooooooo good
