Easy, Yummy, Healthy Pancake & Muffin Recipes for Fall!

It’s the season of orange pumpkins, multi-colored leaves, scented candles, warm sweaters (almost), and of course, yummy treats! I’m loving all of the Halloween candy and pumpkin spice lattes, but there’s nothing wrong with also enjoying yummy fall recipes that involve healthy alternatives! Here’s a super delicious, healthy, protein packed pancake recipe that you can make for a super balanced breakfast for those chilly mornings :) You can also add certain ingredients listed below in special honor of the Fall season!

Base Pancake Recipe:

1 scoop protein powder (any kind of your favorite flavor!)

1 banana mashed

1 tbs. milk (any kind based on dietary needs)

½ cup egg whites

1 tsp. cinnamon

Combine all ingredients in a bowl and mix! Pour onto a greased griddle or pan and cook until golden brown on each side. Makes 2 large pancakes, or 4 small ones. Drizzle with all natural maple syrup, honey, or agave! Add the ingredients below for pancakes booming with fall flavors!

Pumpkin Pie: Add to batter 1tbs. pumpkin puree and 1tsp. of pumpkin pie spice!

Apple Pie: Add to batter 1tbs. applesauce (only made with apples & water), 1tsp. cinnamon & top with apple slices!

Carrot Cake: Add to batter 2tbs. of shredded carrots, ½tsp. of nutmeg & a ½tsp. of cinnamon!

Butter Cup: Add ½tbs. almond butter and 1tsp of cocoa powder!

Chocolate: Use chocolate milk instead of regular milk and add 1tsp. of cocoa powder!

Also feel free to add whatever you want to the mix and create your own yummy pancake! Some popular choices are berries, bananas, chocolate chips, or even nuts!

 

BONUS RECIPE: PUMPKIN CHOCOLATE CHIP MUFFINS!

If you like muffins over pancakes, or you just want more of a fall treat, these muffins are a must make for the fall season! The healthy alternative ingredients are in parenthesis!

Ingredients:

2/3 cups all-purpose flour (or 1/3 cup all purpose flour & 1/3 cup whole wheat flour)

1 cup canned pumpkin puree

1 cup sugar (or stevia for baking)

2 large eggs (or 4 egg whites)

½ cup of melted butter (or natural apple sauce)

1tsp. baking soda

1/4tsp. baking powder

1/4tsp. salt

1tsp. cinnamon

1tsp. pumpkin pie spice

1 cup semi-sweet chocolate chips (or all natural dark chocolate chips!)

Set oven to 350 degrees. Thoroughly mix all of the dry ingredients in a large bowl (flour, sugar, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt); then set aside. Beat together all of the wet ingredients (eggs, pumpkin puree, and butter). Pour wet ingredients into dry ingredients and mix until it’s a nice texture. Add the chocolate chips to the batter! Spoon evenly into greased muffin tins. Bake for 20-25 minutes (if you did healthy alternatives do 20 minutes). Enjoy & Happy Fall baking! :)
