Culinary Chronicles: Rainbow Cake

After 3 years in Memphis, I am still surprised when it is October, in the 80s, and the trees haven’t turned the red and gold colors that I loved so much growing up.  Even though the brown leaves that fall in Memphis are fun to stomp on, they cannot compete with the beautiful multicolored leaves of Baltimore. I can’t help but miss the campus of my prep school, which would transform into a golden forest every Fall (right: entrance to the campus). The Rhodes campus is beautiful, but it isn’t nearly as colorful. However, just because our campus is lacking color, doesn’t mean your food has to as well! Add a little color to your life through this fun and delicious rainbow cake (in a jar)!

Ingredients
1 box cake mix and required ingredients
Food coloring
Mason Jars (2 large/6 medium/12 small)

Preparation

Chelsea is a junior at Rhodes College, class of 2012, majoring in English and minoring in both Chinese & International Studies. She plans to pursue a career in print or broadcast journalism. Her involvement on campus ranges from serving as co-captain of the varsity field hockey team, to being a member of the Delta Delta Delta sorority, to writing sports & fashion articles for Rhodes' media outlets. Chelsea has interned at CBS Channel 4 News Boston in the sports room, as well as other companies where she enjoyed internships in event-planning, marketing, fashion, jewelry design, and human rights. Aside from work and school, Chelsea enjoys running, music, singing, and shopping online.
