10 Recipes for your Weekly Meal Prep

This article is written by a student writer from the Her Campus at Portland chapter.

Between classes, work, and extra-curriculars, who has time for fancy meals? Also major side eye to those of you still lucky enough to have meal points. However if you’re stuck cooking for yourself give these recipes a try for an easier (and tastier week)!

1. Bean and Cheese Burrito

Try making burritos ahead of time instead of giving into the urge of making a late night Taco Bell run. You can put whatever you want in the burritos! I usually just do beans and cheese and put it in its own sandwich bag and then grab it out and microwave it for 30 seconds at a time.

2. Breakfast Burrito

3. PB&J (yes really)

If you’re not advers to PB&J sandwiches, you can actually meal prep them to save time! Put penut-butter on both sides to keep the bread from getting soggy, jelly in the middle, put it in a bag, and leave it in the freezer. They de-thaw in your lunch box by lunch time!

4. Wraps

5. Taco Salad

I like salads and I like being healthy, BUT AT WHAT COST?? Taco salads are probably my favorite. You can meal prep by portioning everything out and cooking the meat. I like to put black beans, tortilla chips, shredded cheese, corn, ground turkey, and lettuce in my salads. You can use salsa as a dressing but just leave it on the side so your salad doesn’t get soggy!

6. Smoothie Bags

7. RICE

Okay, rice by itself is kinda boring. But if you cook some rice and set in a tupperware you can add it to soup, on the side of steamed veggies, or with some meat and it’ll boost your meal.

8. Burrito Bowl

9. Snack Grab Bags

If you normally eat pretzels, chips, crackers, or other snacks on the sides of your meals save yourself some time by portioning out your snacks for the week ahead of time! It makes it easier to just grab and go.

10. Chicken and Veggies
