What to Do With Your Thanksgiving Leftovers

Thanksgiving is over! Do you have enough leftovers that you don’t even know how to finish them? Are you looking for new ways to eat Thanksgiving foods? I have complied a list of 5 fun and easy recipes for you to try this holiday season!

Grilled Turkey, Brie, and Apple Butter Sandwich with Arugula

Ingredients: bread, unsalted butter, apple butter, turkey, brie cheese, arugula

Recipe:

  1. Spread the pieces of bread with unsalted butter
  2. Spread apple butter on top
  3. Top the bread with a few slices of turkey
  4. Add brie cheese on top of the turkey
  5. Arrange a few arugula leaves on top

Heat it up on a skillet or stove, cook each side for 2 to 3 minutes until melted and golden.

 

Turkey Waldorf Salad

Ingredients: shredded turkey, sliced celery, celery leaves, chopped apple, halved seedless grapes, chopped toasted pecans, non-fat yogurt, mayo, honey, salt, black pepper, celery root

Recipe:

  1. Toss the turkey, celery, celery leaves, grapes, apples, and pecans in a large bowl
  2. Whisk together the yogurt, mayo, honey, and salt in a small bowl
  3. Put the celery root in a small bowl and coat with dressing
  4. Add dressing, salt, and pepper to the turkey mixture and toss evenly
  5. Spread the celery root evenly onto a platter and top with the dressed salad

 

Leftover Thanksgiving Panini

Ingredients: Dijon mustard, sourdough bread, Swiss cheese, shredded turkey, cranberry sauce, leftover dressing, gravy, butter

Recipe:

  1. Spread mustard on slices of bread
  2. Lay a slice of cheese on each piece
  3. Arrange the turkey and cranberry sauce
  4. Lay on the dressing and gravy over the top
  5. Put the two halves together and spread butter on the outside of the bread
  6. Place the sandwich, butter side down, onto a hot Panini maker, or stove
  7. Grill until the bread is crispy and golden and the cheese is melted
  8. Flip the sandwich

 

Turkey Bolognese

Ingredients: extra-virgin olive oil, chopped onion, minced garlic cloves, peeled and finely chopped carrot, chopped celery stalk, shredded cooked turkey, marinara sauce, chopped basil leaves, salt, pepper, spaghetti, parmesan

Recipe:

  1. Heat oil in a large frying pan, add the onion and garlic and sauté until translucent
  2. Add the carrot and celery and sauté until tender
  3. Add the turkey and sauté for one minute
  4. Add the marinara sauce
  5. Simmer for 15 minutes, stirring often
  6. Stir in the basil
  7. Cook the spaghetti in a large pot of boiling salted water until tender
  8. Drain and add to the sauce, add parmesan

 

Eggs in Purgatory

Ingredients: 5 large eggs, chilled mashed potatoes, flour, olive oil, salt, pepper, marinara sauce, grated parmesan

Recipe:

  1. Preheat oven to 200 degrees
  2. Stir one egg into a large bowl
  3. Mix in the potatoes and flour
  4. Form potato mixture into 4 pancakes
  5. Heat the oil in a large pan
  6. Fry the pancakes until they are golden brown and heated through
  7. Drain the pancakes on paper towels
  8. Keep them warm on a baking sheet in the oven
  9. Crack the remaining eggs into the pan
  10. Sprinkle with salt and pepper
  11. Cook until the white is firm
  12. Turn the eggs over and cook for 30 more seconds
  13. Spoon the sauce onto a plate and place the pancakes over the sauce
  14. Top each pancake with an egg and sprinkle with parmesan
