Dorm Room Iron Chef: Meals You Can Make in the Microwave

This article is written by a student writer from the Her Campus at Northeastern chapter.

It’s late at night and you’ve been slaving away endlessly over a research assignment… your stomach is growling… but the dining hall is so… far… away…

Fear not! This article is for the late-night-snackers, the champions of avoiding the dining hall, the amateur dorm room chefs, or those just too lazy to leave the room. Now, for those who are living in dorm room luxury and have their own kitchen, the possibilities are endless. But for those brave souls whose only equipment is a mini fridge, a microwave, and their own creativity; this one goes out to you.

1.     Mac and Cheese in a Mug

Delicious, easy, and customizable!

-Start with your favorite mug, and add about a ½ cup of elbow macaroni noodles (give or take some on the amount of pasta based on mug size)

-Add 1 cup of water

-Heat in the microwave for about 8 minutes, pausing to stir in-between. Noodles should be fully cooked at this point! If not, add a bit more water and continue. There should be a small amount of water left at the bottom

-Time to get creative! Add any type of cheese you like and stir in. You can put mug back in the microwave for 30 seconds to melt the cheese completely. Other possible additions: veggies, herbs, old bay seasoning, or even Ritz cracker crumbles on top!

2.     Quesadilla (+ a little extra)

So I know that traditionally quesadillas are tortillas, cheese, and more cheese. But there’s so much more you can add! For example, I am a huge fan of the pizza quesadilla!

-Starting with a flour tortilla, spread tomato sauce over the middle, leaving about an inch of the tortilla uncovered all around the sauce.

-Add mozzarella cheese (pre-shredded is easiest)

-Add anything else you usually like on a pizza! I always add pepperoni; veggies or herbs would work as well!

-Cover with another tortilla and microwave for about a minute! Allow to cool down, and then enjoy.

3.     Chocolate Chip Cookie in a Mug

A personal favorite of mine… try not to eat this too often as it will 100% contribute to the Freshman 15. It is so good.

-Microwave a tablespoon of butter in a mug until completely melted

-Mix in a tablespoon of granulated sugar and a tablespoon of brown sugar

-Add in half a teaspoon of vanilla extract

-Add a pinch of salt

-Add in one egg yolk, make sure to mix in completely

-Add 3 tablespoons of flour

-Add chocolate chips (and eat a few as you go)

-Microwave for 40-50 seconds and serve warm! (I suggest with a bit of ice cream)

That’s all folks! Good luck in all of your future dorm room cooking adventures! (Don’t set off the fire alarm).
