October marks the official start of the pumpkin spice season! The Pumpkin Spice Latte is often the go-to treat for the fall, but my favourite alternative pumpkin indulgence is the Pumpkin Spice Cookie!

They are as delicious as they sound, and are less complicated to make than you might think! These cookies can be made with two ingredients—Spice Cake mix and pumpkin! As an added bonus, the cookies are also vegan friendly and lactose free

So here is how you can make your own batch of delicious Pumpkin Spice treats! Use them to impress friends, win over your boyfriend/girlfriend’s family, or simply reward yourself for surviving midterms.

Go ahead and indulge. Trust me, basic has never tasted this good.

Ingredients:

1 box of Spice Cake mix 

can of pumpkin puree 

3-4 ounces of dark chocolate (optional) 

Recipe makes about 27 cookies.

 

STEP 1: Pre-heat your oven to 350˚F or 175˚C. Empty your spice cake mix into a medium-sized bowl. 

 

STEP 2: Open your can of pumpkin puree and add it gradually to the cake mix: 

It should look something like this once you’ve combined them. Stir well! 

 

STEP 3: Using a spoon, scoop your batter onto a baking sheet. If you don’t have a sheet, don’t worry, I used a baking dish.

The cookies won’t spread too much; they should be about an inch or an inch and a half in diameter. 

 

STEP 4: Bake your cookies for 15-18 minutes, until they are firm to the touch and a light brown. Let the cookies cool and repeat the process!

 

STEP 6: Halfway through my batter, I added in 3 ounces of dark chocolate, something I highly recommend to all the chocolate lovers out there!

 

STEP 7: Enjoy these delectable treats and celebrate the annual Pumpkin Spice Craze!
