What’s the first thing that pops in your head when you hear the words “healthy eating?”  For starters, I think of leafy greens on top of more leafy greens. While that is true, there’s a lot more to healthy eating than just eating your greens. People have created this illusion that healthy eating is all about eating a piece of lettuce for lunch, a handful of nuts for dinner, and that’s it.
