Meal in a Mug: Chicken Cordon Bleu

1 can chunk chicken, drained and flaked

1/3 cup shredded Swiss cheese or Italian-blend cheese

¼ cup chopped ham

2 tbsp Alfredo sauce

½ tsp Dijon mustard

1/8 tsp ground black pepper

1/3 cup garlic-and-herb seasoned croutons, coarsely crushed

  • In the mug, combine chicken, cheese, ham, Alfredo sauce, mustard and pepper.
  • Microwave on High for 75-90 seconds or until heated through. Sprinkle with croutons.

I made a LOT of substitutions on this recipe. Instead of using canned chicken, I used rotisserie chicken I had left over. Instead of Swiss cheese, I had mozzarella. While the recipe calls for mustard with the Alfredo sauce, I left it out and added an extra tablespoon of Alfredo. I also used breadcrumbs instead of croutons on top. Even with all these differences, the meal tasted fantastic. It was extra cheesy and full of protein, and I loved it. I’m a huge fan of Chicken Cordon Bleu and was impressed with how much it tasted the same, even when made in a microwave. The only thing I might say needs to be adjusted is how much sauce is used in the recipe. Granted, I did add more Alfredo to the mix but I feel it would probably be the same if I had used mustard. I think this would be great to dollop on top of some bread and eat it that way. The meal was small, but at least it was full of good food to eat. Also, the recipe is incredibly easy to make. I highly recommend trying this one.
