Meatless Meals Approved by a Meat-Eater: Veggie Curry

With me being vegetarian and my boyfriend being a lover of meat it’s sometimes hard to find meals that we can cook and eat together and both equally enjoy. One of the best crowd-pleasers so far is Veggie Curry!

Ingredients:

100g Lentils

1x Vegetable stock cube

2 Tbsp of Mild Curry Spice

3 x Sweet Potatoes

1x Red onion

2x Garlic Cloves

1x Pepper

1x Tin of Chickpeas

1 x Tin of Chopped Tomatoes

Any other veg of your choice i.e. Broccoli, Kale, Spinach

Method:

  1. Add lentils and stock cube to a pan of boiling water
  2. Chop up sweet potato, onion, pepper and garlic
  3. Add to pan after 15 mins of the lentils boiling
  4. After another 10 mins add the Curry spice
  5. Once the lentils and veg are nearly cooked, add any other veg that requires boiling (something like carrots require a longer cooking time whereas spinach doesn’t need to go in till the last minute)
  6. Add chickpeas and chopped tomatoes and stir
  7. Serve with rice or pitta bread
