The temperature is going down and my cravings for comfort foods are quickly approaching. Fall is the best time to try out some seasonal dishes. Between hot chocolate, soups, and pies, this season’s foods are simply delectable. Here are a few of my favorites:

Pumpkin Pancakes

 

This time of year, there is pumpkin-flavored everything, but the best pumpkin-flavored delight I’ve come across has been these delicious pancakes. Breakfast doesn’t have to be boring with these hotcakes!

Here’s what you’ll need

·                     1 1/4 cups all-purpose flour

·                     2 tablespoons sugar

·                     2 teaspoons baking powder

·                     1/2 teaspoon cinnamon

·                     1/2 teaspoon ground ginger

·                     1/2 teaspoon salt

·                     1/8 teaspoon nutmeg

·                     1/8 teaspoon ground cloves

·                     1 cup milk

·                     6 tablespoons pumpkin puree

·                     2 tablespoons butter, melted

·                     1 egg

Directions:

1.       Add the flour, sugar, baking powder, cinnamon, cloves, ginger, nutmeg and salt into a medium bowl. Stir them together well

2.       In a separate bowl, add butter, egg, pumpkin and milk. Whisk these ingredients together and add them to the dry ingredients

3.       In a skillet, melt the butter over medium heat

4.       Pour batter and cook for about three minutes on each side

5.       For extra deliciousness, serve with butter and maple syrup

Sweet and Salty Pumpkin Seeds

While studying or watching T.V., I’m always snacking. These sweet and salty pumpkin seeds are the perfect midday treat for a snackaholic like me.

You will need:

·         2 cups fresh pumpkin seeds, rinsed and patted dry 

·         2 tablespoons unsalted butter, melted 

·         2 tablespoons granulated sugar 

·         1/2 teaspoon kosher salt 

·         1/4 teaspoon ground cinnamon

Directions:

1.       Heat oven to 300 degrees Fahrenheit

2.       Spread seeds out on a baking sheet and bake them until they are completely dry (about 50 or 60 minutes)

3.       Increase the temperature of the oven to 350 degrees Fahrenheit

4.       Take the seed off of the baking sheet and toss them with the butter, cinnamon, sugar and salt in a large bowl.

5.       Put the seeds back on the baking sheet and continue baking them, tossing occasionally, for about 10 or 15 minutes until they are golden brown
