Spike your Summer with these Fun Cocktails

 

It’s about that time to head back to our hometowns for the summer, and we’re at that age where flagging down the ice cream truck or spending our day at the public pool just isn’t going to cut it. It’s 5 o’clock somewhere ladies, and I’m pretending it’s 5 o’clock all summer long. Take a look at some of these recipes that will liven any party or make tanning in your backyard that much more pleasurable.

  1. Blackberry Lemonade Margaritas

FOR THE BLACKBERRY PUREE

  • 1-1/2 to 2 cups fresh blackberries, rinsed and drained            
  • 1 to 2 tablespoons sugar

FOR THE MARGARITA

  • 1/4 cup sugar
  • 2 lemons (use Meyer lemons if possible)
  • 4 teaspoons blackberry puree
  • 4 ounces prepared lemonade (homemade or store bought)
  • 4 ounces good quality silver tequila

 

Directions: Process blackberries in a blender, and then push through wire mesh colander. Add 1-2 tbsp. sugar, cover bowl, and refrigerate until ready to make cocktails. To prepare glasses, cut a slice of lemon and run it around each rim of glass. Then dip the moistened rim in a plate of sugar and fill each glass halfway with ice. Next, fill a cocktail shaker with 2 tsp. blackberry puree, 2 oz. lemonade, 2 oz. tequila, and the juice of half a lemon. Shake vigorously then pour over ice. Vwala!

 

  1. Pineapple Breeze

                                                                                     

Ingredients:

  • 1.5 oz. Malibu rum
  • ½ can Sprite
  • ¼ cup pineapple juice
  • ¼ cup orange juice

 

Directions: This one is less strenuous than the margaritas – simply stir all of the ingredients together, pour over ice, and serve! Garnish with a small piece of pineapple for an extra special touch.

 

  1. Peach Strawberry Sangria

 

Ingredients:                                         

  • 5 oz. pinot grigio
  • 1 oz. peach brandy
  • 4 oz. ginger beer
  • 1 small peach sliced
  • 3 strawberries sliced

Directions: Pour the wine, brandy, and ginger beer into a large wine glass (at least 10 oz.). Add strawberry and peach slices for extra flavor and decoration. A perfect, light, refreshing cocktail for those hot summer days.

  1. Henny Colada

 

Ingredients:

  • 1.5 oz. Hennessy
  • 1.5 oz. cream of coconut 
  • 4 oz. pineapple juice
  • caramel syrup
  • cherry (optional garnish)

 

Directions: Over ice, fill a cocktail shaker with the Hennessy, pineapple juice, and cream of coconut and shake well. Pour into a class and drizzle caramel syrup on top, yum!
