Recipe for Cold Winter Days: Spicy Vegan Purée Soup

Every student living on limited funds (aka all of us) has faced this problem multiple times: your gut is growling and you need to eat something that will keep the hunger at bay for as long as possible, as quickly as possible. You want to eat healthy but warm, since thanks to this never-ending winter you’re frozen down to your bones. Plus, you have a very tight budget. This delicious soup recipe will not only keep you warm and stuffed, but is also easy on the wallet and the environment – and even a proven hit among meat-lovers!

 

All you need is:

  • 300g potatoes
  • 2 carrots
  • 1 head cauliflower
  • 1-2 garlic cloves
  • 2 cubes of vegetable stock
  • 1 dl Oat milk
  • Cayenne pepper
  • Salt
  • Pepper
  • Dried herbs

Start of by peeling the potatoes and carrots and pulling the leaves off the cauliflower. Chop everything into cubes. Put all the chopped vegetables into a steel pot and add water until they are all covered. Add the vegetable stock cubes and salt and bring to a boil.

When the vegetables are thoroughly boiled and soft, bring the heat down and pour 3/4 of the water into a separate dish. Start pureeing the vegetables with a hand blender and add the oat milk, garlic and the herbs and spices (if you have never used cayenne pepper before, beware, it can be surprisingly hot). Now you can also add as much of the boiled water as you want to make the consistency exactly to your liking. And then, voilá! Pour into a bowl, garnish with some herbs and enjoy!
