A hot soup is the best winter food – here’s an easy vegan tomato soup recipe that’s super comforting and full of vitamins and minerals to boost your immune system and keep you healthy and energised all winter.

Ingredients:

500g (1 carton) ground tomatoes250g cherry tomatoes1 dl chopped sundried tomatoes1 onion2 cloves of garlic1 dl water1 vegetable stock cube2 tsp Italian seasoning/pizza seasoningolive oil or vegetable oil1 tsp sugarsalt and black pepper to taste

Start by preheating the oven to 200°C. Peel the garlic cloves and cut them and the cherry tomatoes in half. Place them on an oven tray and sprinkle with olive oil, a little bit of salt, and Italian seasoning. Roast in the oven for about 15 minutes.

While the cherry tomatoes are in the oven, chop the onion and sauté in a cooking pot until it starts to soften. Add the ground tomatoes, sundried tomatoes, vegetable stock cube, and water. Season with sugar, salt and pepper. Cook for about 15 minutes. Add the roasted cherry tomatoes, crush the roasted garlic cloves and throw them in too.

Top with nuts or tofu for a protein boost and enjoy!
