Collegiette in the Kitchen: Super Easy No-Bake Cheesecake

A student often has to be creative in the kitchen, because some very basic equipment may not always be available. Living without an oven forced me to leave baking for a while, but luckily I discovered some delicious desserts that can be made in the fridge.

This treat takes only few simple steps to make, though the cake needs to be chilled for 2-3 hours.

You need:

  • Biscuits (Digestive or other)
  • Butter
  • Double cream
  • Cream cheese
  • Quark
  • (Sugar)
  • Berry or fruit juice of your choice
  • Farina
  • Berries, mint leaves or other decorations on top
  1. Crush the biscuits and mix the crumbs with butter. Press the mixture into a dessert bowl. Let the crust chill in the fridge while you prepare the filling. Hint: If you’re not those lucky ones who have a full set of dishes, a wine glass or a cute teacup does nicely.

  2. Whip the cream and mix it with cream cheese and quark. You can add a little sugar or vanilla sugar, according to your taste.

  3. Pour the filling on the crust and let it chill in the fridge for at least 2 hours. Note that since no gelatine is added, the filling won’t turn out all jellylike, but softer (and the cake is vegetarian-friendly, too).

  4. Prepare the topping by heating the juice in a saucepan. Mix a tablespoon of farina with a small cupful of water and add to the pan. Stir until the mixture thickens. Bring to the boil and then let the mixture cool before pouring it on the cheesecake. Put the dessert bowl back in the fridge for an hour or so. Hint: Sprinkling some sugar on the surface keeps the topping from caking.

  5. Before serving, decorate the cheesecake with berries, mint leaves or slices of fruit. Enjoy!
