5 Easy and Affordable Lunches

Anyone tired of the bland UniCafe food yet? Want a healthy but cheap alternative you can fix up at home? Everyone knows that the 2.60 € meal from UniCafe is a great deal price-wise but sometimes the food can get to be a bit too much – especially if you’ve made a habit of eating there every day.

 
Here are five quick lunches you can make yourself and take to school or library:
 

1. Chicken-pasta: just mix cherry tomatoes with marinated chicken and pasta. Crush parmesan cheese on top and sprinkle chopped onion into the mix.

2. Tuna salad: Fresh lettuce mixed with tuna, cottage cheese, tomato, onion, and cucumber. Just add Rhode Island Sauce and you’ll have a light and delicious meal.

3. Grilled sandwiches: Put a twist on grilled cheese sandwiches with tomato, pesto and red onion.

4. Noodles with peanut sauce: Boil noodles. Fry salted peanuts with food cream (personally, I prefer lime and coconut), add couple of teaspoons of honey. Pour sauce on noodles. This is a quick way to make your Ramen a bit more interesting.

5. Exotic Risotto: Mix half a can of salsa sauce, tikka masala sauce, frozen vegetable mix and minced meat and fry them all together. Boil rice. Mix rice with the meat and vegetables. 

These foods are simple and easy to make, and they are guaranteed to be healthy and student budget friendly. No more settling for school cafeteria lunches!
