Get Lit for the Summer

The weather is warming up so I know you want to stay refreshed and lit at the same time. These drinks will get your turnt, of course only if you’re over 21. Her Campus has you covered with the best drinks for the warm weather!

Pineapple, Lime, and Coconut Spritzer

3 cups pineapple juice

2cups coconut water

½ cup fresh lime juice (from about 8 limes)

2 cups club soda or sparkling water

½ pineapple, cored and cut into spears

Splash of rum (optional)

Mix the pineapple juice, coconut water, and lime juice in a large pitcher. Chill for 30 minutes or up to 12 hours. Before serving, add the club soda. Serve over ice, garnished with a pineapple spear. Add a splash of rum, if desired, if not drink it as is.  

Frozen Mango Margarita

One 10-ounce bag frozen diced mango

2/3 cup tequila (preferably silver,80 proof)

1/4 cup fresh lime juice

2 tablespoons orange liqueur, such as Cointreau

2 tablespoons superfine sugar

2 cups ice water

Put the mango, tequila, lime juice, orange liqueur, sugar and water in a blender and blend until smooth.

 

Piña Colada Pineapple Cups

2 pineapples

4 oz. light rum

1 oz. dark rum

4 oz. Coconut Cream

2/3 c. chopped fresh pineapple

Splash pineapple juice

Splash coconut milk

Ice

Cut off the pineapple tops. Remove the inside of the pineapple. Be careful not to cut the bottom of the pineapple, or your drinks will leak. Cut the removed pineapple slices into large chunks. Set aside. In a blender, mix together the alcohol, coconut cream, pineapple chunks, juice, coconut milk and ice. Blend until slushy and enjoy.

 

Mojito Slushies

1/2 c. fresh lime juice (about 4 to 6 limes)

1/4 c. agave

1/3 c. fresh mint leaves

2 limes, zested

1/2 c. light rum

Ice

Mint sprigs, for garnish

Lime wedges, for garnish

Add the lime juice, agave, mint leaves, lime zest, and rum to a blender. Blend until smooth. Fill the blender to top with ice and blend until slushy. Pour into glasses and add an sprig of mint and a lime slice.  

Fruity Wine Slushies

1 lb. frozen peaches

3 c. pinot grigio

1 lb. frozen strawberries

2 fresh strawberries, for garnish

In a blender, blend peaches with 1 1/2 cups pinot grigio until smooth. Mixture should be thick, but pourable. Transfer to a container and rinse blender. Blend strawberries with remaining 1 1/2 cups pinot grigio until smooth. Place serving glasses in a loaf pan so they lean and you can pour in first layer at a diaganol. Pour in frozen peach mixture until glass is half full. Add frozen strawberry mixture, spooning mixture on the top to prevent a spill. Garnish with strawberries and serve.  

Peach Lemonade

1-pound package frozen peaches

12-ounce can frozen lemonade concentrate

36 ounces’ water (fill the lemonade cup up three times)

1/2 cup good quality vodka (optional)

Place all of the ingredients in a blender and mix until smooth and serve over ice. This can also be made into a slush. Add ice to blender and only 1 can of water would be needed.
