3 Easy Dorm Friendly Recipes

Living in a dorm can definitely be challenging. Shared bathrooms, limited closet space, and the lack of a sink or stove can be a real downer. Luckily, there are so many easy and delicious meals and desserts you can make with just a microwave and a few simple utensils. Check out our favorites below!

1. Brownie in a Mug

This is an easy way to get your chocolate fix without overindulging, as it only makes one serving. All you need to make this mug full of joy is:

    ¼ cup of flour

    ¼ cup sugar

    2 tbsp. unsweetened cocoa powder

    2 tbsp. canola oil or melted butter

    ¼ cup water (can also use milk or almond milk)

    Pinch of salt (optional)

    1-2 drops vanilla extract (optional)

    Sprinkle of chocolate chips (optional)

Mix everything together well and microwave until moist, not dry. Try starting with 60 seconds and adding 30 seconds if needed. (You may have to experiment with cooking time depending on the power of your microwave.) Let cool for a minute or two and then enjoy!

2. Vegetarian Burrito Bowl

Skip Chipotle and save some money and time by making this healthy alternative.

    1 portion/package microwavable pre-cooked brown rice

    Canned black or pinto beans

    Shredded cheese

    Greek yogurt or sour cream

    Salsa

    Avocado, tomato, greens, or tortilla chips (optional)

Prepare rice as directed in microwave. Add rice to a microwave safe bowl (or mug!) add beans to bowl and microwave until bean are warm, about 30 seconds. Top with diced avocado, tomato, greens, or tortilla chips if desired. Devour!

3. Mac and Cheese in a Mug

Love mac and cheese but hate the fake taste of Easy Mac? Try this simple and homemade alternative!

    ⅓ cup macaroni noodles

    ¾ cup cold water

    4 tbsp. milk

    ¼ tsp. cornstarch

    4 tbsp. shredded cheddar cheese

    Salt and pepper

In a large microwavable bowl or mug place the noodles and water. Make sure the mug/bowl is big enough to allow the water to boil up. Microwave for about 3.5 minutes (based off a 1200 watt microwave). Check to see if the pasta is thoroughly cooked. You may have to experiment and microwave the noodles longer if you have a less powerful microwave. Next, pour out the remaining cooking water and stir in the milk, cornstarch, and cheese. Microwave for about 60 more seconds. Stir and use salt and pepper as desired.
