5 Recipes That Can Be Done in 15 Minutes

Whether you live on or off campus, cooking can be a stressful task, especially cooking for one! However, if you have access to a stove top, you can make one of these five stress-free dishes every night this week. 

1. Grilled Cheese 

Ingredients:

  • Butter
  • Two slices of bread 
  • A couple slices of American cheese (…or any cheese)

Directions: Turn your stove top on to a medium heat and place your frying pan on the stove. Melt a decent amount of butter in the frying pan and then place a cheese of your choice in between two slices of bread. It’s important to butter BOTH sides of the bread (the sides that are not touching the cheese). Cook each side for 2-4 mins— until the bread is a golden brown and the cheese is fully melted. Enjoy!

2. Pasta 

Ingredients

  • 1-2 cups of pasta of your choice 
  • Sauce (again your call)
  • Salt 
  • Parmesan cheese

Directions:  Fill the pot 2/3 with water and some sal (it helps the water boil faster.) Once the water boils, throw the pasta in! At the same time, place your sauce in a sauce pan on low; after about 10-12 minutes both the pasta and the sauce will be done! Strain the pasta and put the sauce on top and you’re good to go!

3. Omelette 

Ingredients

  • 2-3 eggs
  • Toppings (cheese, bacon, veggies, chicken, and more!)
  • A splash of milk (optional)
  • Salt and pepper

Directions: Beat the eggs in a small bowl before adding them to the frying pan— if you want to add milk, this is the time to do so. Once your eggs are halfway cooked add your toppings in. If you want to add cheese, wait until the omelette is fully cooked. Next, fold that bad boy over and allow the cheese to melt. Serve with fruit or some home-fries!

4. Fried Chicken (courtesy of All Recipes) 

Ingredients

  • 2-3 pieces of chicken breasts 
  • 1 cup of all-purpose flour
  • 1 quart vegetable oil for frying

Directions: Heat the oil in a large skillet. Place your floured chicken in the skillet and fry it until one side is golden brown — do the same with the other side! It’s important to let your chicken drain for about 5 minutes before serving. Serve with some veggies or french fries!

5. Chicken Quesadillas (courtesy of Betty Crocker) 

Ingredients 

  • 3 oz of chicken breast strips
  • 1/4 cup of salsa
  • 1 package of four tortillas 
  • 1 cup of Colby-Monterey Jack cheese

Directions: Cut the chicken breast into small pieces and mix it with the salsa. While placing the tortilla on a nonstick skillet, place 1/4 of the mixture on the tortilla and top it off with some cheese. Place an additional tortilla on top and get cookin’! Your quesadillas are ready to eat in only 4-6 minutes. Serve with chips and sour cream!
