Recipe of the Week: Sweet and Savoury Breakfast

Do you ever have those mornings when you wake up and can’t decide what to eat? Part of you wants something savoury, and another desires something more sweet and fruity? I get it all the time! So, why not put them together?

 

 

My new favourite breakfast is an egg and spinach omelette, with a side of warm banana cooked in cinnamon. It might sound like a weird combination, but trust me: it’s good.

All you need is….

  • 2 eggs
  • A handful of spinach
  • 1 banana
  • Cinnamon
  • Coconut oil (the best oil to cook with)

 

Then, all you need to do is…

 

  • Whisk the eggs together with some milk in a jug
  • Heat a teaspoon of coconut oil in a frying pan
  • Chuck in the spinach leaves
  • Pour the egg mixture on top and wait for it to cook
  • Fold it carefully in half and flip over to cook the other side
  • Throw in some chopped banana to the other side of the pan, or a separate pan.
  • Sprinkle the cinnamon on top, flipping the banana slices over so everything is covered
  • Serve!
